3 breakfast recipes for your morning boost

  • Smashed avocado on toast with a poached egg- For this meal you will need 1 ripe avocado, bread of your preference and 1 egg. You will start by toasting your bread then opening your avocado to remove the stone. Then you will slice your avocado to place in a bowl and smash it to the consistency you prefer, as chunky or smooth as you like. For your poached egg you will fill a bowl with about 5cm of water and wait for it to simmer. Stir the water to make a gentle whirlpool, then crack your egg into the middle. Let the egg cook for 3-4 minutes and then you’re finished.
  • Healthy pancakes- This recipe needs 50g of self-raising flour, 50g of wholegrain flour, 2 small eggs, 150ml of semi skimmed milk, low fat yogurt and berries of your choice. First you will sift the flours together then add both egg yolks and the milk to stir until you have a thick paste. Whisk the separated egg white then add them to the batter and mix, then pour the batter on to a non-stick pan at the size you desire, and sprinkle the berries on top once you’re finished.
  • Easy overnight oats- For the overnight oats you will need oats, milk, a sweetener (optional), natural yogurt and toppings of your choice. You start but pouring your oats and milk into ta bowl, then adding the natural yogurt and mix together until they are a smooth consistency. Now add your sweetener if you have one. Next you need to seal the bowl and leave it in the fridge overnight. The next morning take the bowl out the fridge, add your favourite toppings and then you’re finished!
